Sweet Potato Latke Hot Dish

For the sweet potato latkes
 2 medium sweet potatoes
 ½ medium onion
 2 scallions, finely-chopped
 3 tbsp flour
 1 l baking powder
 1 egg +1 egg white, lightly-beaten
 ¼ tsp cayenne pepper
 ¾ tsp salt
 ½ tsp black pepper
For the quiche
 2 onions, diced
 2 tbsp oil for sauteing
 1 large eggplant, peeled and cubed
 1 medium zucchini, cubed
 4 eggs
 ¼ cup breadcrumbs
 8 oz plain greek yogurt or sour cream
 ¼ cup chopped parsley
 salt and pepper
 4 slices smoked cheese
For the sweet potato latkes

Shred the sweet potato and onion and place in a medium bowl. Add scallions, flour, baking powder, beaten eggs, cayenne pepper, salt and black pepper. Mix well to combine.

Heat oil a large cast-iron or nonstick skillet over medium heat. Using a medium cookie scoop, spoon some of the latke batter into the skillet, pressing down lightly to flatten.

Fry until golden brown, about 2 to 3 minutes per side, turning just ounce. Remove and drain on a cooling rack set over paper towel to catch any excess oil.

For the quiche

Preheat oven to 350°F.

In a large skillet over medium heat, saute diced onions in oil, until lightly-golden. Add cubed eggplant and zucchini and continue to cook until vegetables are soft. Stir occasionally to keep vegetables from burning.

Remove from flame and let cool. Add eggs, breadcrumbs, yogurt and parsley. Season to taste with salt and pepper. Pour mixture into deep round quiche dish and bake for 30 Minutes

Put slices of smoked cheese on top of baked quiche. Top with the sweet potato latkes and bake for an additional 10 Minutes to melt the cheese and crisp the latkes.
