
Preheat oven to 400 degrees F. Line a quarter-sheet pan with foil or parchment paper.
Using the “S” blade of your food processor, purée onion. You can also grater the onion by hand, if you prefer.
Kugel flats can be frozen with no topping. Defrost and bring to room temperature. Brush with a bit of olive oil and reheat 10 Minutes in a 400-degree F oven.
Switch blades and shred potatoes. Add beaten eggs and oil to the mixture in the food processor. Season with salt and pepper.
Pour the batter into prepared pan. Bake 90 Minutes or until golden and crispy.
Cool 5 Minutes and cut in squares.
Top with caramelized onions, shredded beef or chicken or sauteed pastrami strips. Drizzle with garlic mayonnaise. Serve warm
