Nothing beats the perfect one-bowl cake in your Pesach recipe repertoire.

6 eggs, at room temperature
1 ½ cups sugar
1 ½ cups oil
¾ cup cocoa
1 ½ tsp baking soda
¾ cup potato starch

Preheat oven to 350°F. Line a 9”x13” pan or 2 large loaf pans with parchment paper.

In the bowl of electric mixer, beat eggs and sugar until light and fluffy. Add oil and mix to combine.

Add cocoa, baking soda and potato starch. Mix to combine. Do not overbeat. Pour batter into prepared pan.

Bake for 50 Minutes or until toothpick inserted in cake comes out clean. Remove from oven and cool on wire rack.
