The surprise filling makes these muffins dessert worthy!

1 stick margarine
½ tsp vanilla extract
½ cup sugar
2 eggs
¾ cup flour
½ tsp baking powder
¼ cup instant vanilla pudding
3 tbsp parve milk
Filling
1 Cortland or other tart apple
Streusel
⅓ cup light brown sugar
1 tsp cinnamon
¼ cup oil
⅔ cup flour

Preheat oven to 350 degrees F.
Line 12 muffin cups or prepare 12 paper baking cups.

Beat margarine with sugar and vanilla until creamy.

Add eggs and beat to combine.

Stir together flour, baking powder and vanilla pudding.

Add dry ingredients to batter alternating with the pareve milk. Don't over mix.

Fill each muffin cup half full with batter.

Add 1 tbsp of Bavarian Cream and 1 tsp grated apples.

Top with 1 tbsp batter.

Mix streusel ingredients and sprinkle on each muffin.

Bake for 30 Minutes or until cake tester comes out clean.
