
1 stick margarine, softened (1/2 cup)
½ cup brown sugar
¼ cup plus 2 tablespoons granulated sugar
1 tsp vanilla extract
1 egg
1 tsp cream of tartar
½ tsp baking soda
1 ⅓ cups flour
8 oz cinnamon chips
1 tsp cinnamon

Preheat oven to 375 degrees F. Line cookie sheets with Silpat or parchment paper.

Cream margarine with brown sugar, 1/4 cup regular sugar, vanilla and egg until light. Sift in flour, cream of tartar and baking soda. Mix until combined and stiff. Stir in cinnamon chips.

Combine 2 tablespoons sugar with cinnamon in a small bowl. Using a small scoop or your hands make balls of batter, approximately 1 1/2 inches in diameter. Roll balls in cinnamon sugar mixture. Place 2 inches apart on cookie sheet.

Bake about 10 Minutes. Do not overbake. Cool on wire rack.
