This salad with interesting components gets rave reviews!

2 tbsp olive oil
1 lb white button or cremini mushrooms, sliced
2 shallots, thinly sliced
1 red bell pepper, diced
1 clove garlic, crushed
1 tbsp red wine vinegar
1 tsp sugar
kosher salt
freshly ground black pepper

Heat oil in a large skillet over medium-high heat.

Add a single layer of mushrooms and cook, without stirring, for about 5 minutes or until mushrooms are browned on one side.

Turn the mushrooms and stir in the shallots, red pepper, and garlic.

Cook for 5 minutes or until shallots and pepper begins to soften.
