Roasted Pear Tarts

An elegant but simple full-flavored dessert.

Prep Time2 hrs
 ¼ cup sugar
 2 tsp vanilla extract
 2 cups sweet red wine
 2 tbsp fresh lemon juice
 5 medium Bartlett or Anjou pears, peeled, halved and cored
 1 package of puff pastry 5x5” squares, slightly defrosted
 1 egg yolk
 Large sugar crystals
Roast the pears:

Preheat oven to 375 degrees F. Add sugar, vanilla, wine, and lemon juice to a 9 x13 baking dish and stir together to combine.

Arrange pears cut side up. Add water to just over the pears. Roast pears for 50 Minutes to an hour, uncovered, brushing them occasionally with pan juices.

Cool completely. Set aside. Pears may be prepared in advance and refrigerated until needed.

Assemble the tarts:

Preheat oven to 375 degrees F. Line a sheet pan with parchment paper. Place puff pastry squares on prepared pan.

Whisk egg yolk lightly with a fork and brush each square completely with egg wash.

Spread 1 tablespoon Bavarian Cream on of each pastry square until ½” from the edges. Thinly slice each pear-half from the bottom upwards, without cutting through completely.

Fan the pears on top of the cream. Sprinkle large sugar crystals over all the tarts. Place pan on middle shelf of preheated oven and bake for 35 Minutes- 40 Minutes. Serve warm or at room temperature.
