Thinly slicing flanken allows the flavors to permeate the meat—yum!

Yields6 Servings
 1 cup soy sauce
 ½ cup mirin or rice vinegar
 ½ cup dark brown sugar
 ¼ cup toasted sesame oil
 6 cloves garlic, crushed
 5 lbs Miami ribs (thin-sliced flanken)
 5 scallions, checked and sliced
 Black and White sesame seeds

Combine soy sauce, rice vinegar, sugar, sesame oil, and garlic in a medium bowl; whisk to blend well.

Pour into a large zippered plastic bag. Add ribs and seal the bag. Turn the bag over several times to coat the meat. Refrigerate overnight, turning the bag occasionally.

Preheat oven to 350 degrees F. Place meat and marinade in a roasting pan. Bake covered for 2 Hours. Remove from oven and transfer to serving platter. Garnish with scallions and sesame seeds.
