Passionfruit Crumble Bars

Crust
 2 sticks margarine
 ¾ cup sugar
 1 pinch salt
 2 cups flour
Filling
 16 oz passionfruit filling (available at The Peppermill)
Crumble
 1 cup old fashioned oats
 ¾ cup flour
 ½ cup dark brown sugar, not brownulated
 ¾ stick margarine, cut into chunks

Line a 9x12” baking pan with parchment paper.

Preheat oven to 350°F.

In the bowl of a mixer fitted with a paddle attachment, beat margarine and sugar together for about 3 minutes until fluffy.

Add salt and flour. Beat until dough comes together. Press dough evenly into prepared pan. Spread passionfruit filling from edge to edge.

In the bowl of the mixer, combine oats, flour, and sugar. Add margarine and mix just until it forms large crumbs. Sprinkle over evenly over top of pan. Bake for 45 Minutes, until top is golden.

Remove pan from oven and cool for 10 minutes. Cut into thirds lengthwise. Then cut each strip into 8 bars. Cool completely and remove from pan.

Store at room temperature for 1 week or freeze in an airtight container.
