True duck sauce is made from peaches or apricots and an acidic ingredient like vinegar; we use lemon juice instead. If you cannot find peaches, plums will work as well. This sauce is hugely popular with everyone we've given the recipe!

Peel peaches using a serrated peeler. Remove pit and cut into chunks.
Place peaches, 1 tablespoon lemon juice and salt in a bowl and let stand 1 Hour.
Transfer peaches and all accumulated juices into a large pot and add sugar.
Boil over medium heat, 30 Minutes or until slightly jelled. Skim off any foam that rises to the top.
Stir in potato starch until completely dissolved. Add remaining lemon juice.
Blend with immersion blender until smooth.
If it is still too thick, add a few teaspoons of water.
Serve with your favorite roast or chicken nuggets deep fried in a potato starch and egg batter.

I see it yields 6 servings. Can you be more specific as to how much you get from it in cups? I want to know if I should double it or not.

Can you use canned peaches instead of fresh?

We have not tried it with canned peaches. You will need to reduce cooking time. Let us know how it works out.
Whats the best method for preserving this recipe. Canning, w.b. or p.c.? Or freezing in small batches?
The Duck Sauce freezes well. Freezing in small batches allows you to thaw just what you need.
