Fruit Flan

This light and airy cake is the perfect ending to a full meal.

For the cake
 4 eggs, separated
 ¾ cup sugar
 1 tbsp canola oil
 1 tbsp orange juice
 1 tsp vanilla extract
 ¾ cup flour
 ¼ tsp baking powder
For assembly
 Assortment of fruit, sliced strawberries or kiwis, blueberries, mandarin wedges
 piping gel

Preheat oven to 350°F. Grease and flour a flan pan.

Beat egg whites with the sugar until soft peaks form. Add yolks and the rest of the ingredients and mix gently until combined.

Pour batter into prepared pan and bake for about 20 Minutes. Let cake cool in pan for 10 minutes and invert onto serving plate.

Assemble the cake

Fill the cavity of the cake with bavarian cream (custard).

Arrange fruit in concentric circles or rows, covering the filling. Heat piping gel or apricot jam in the microwave and brush over fruit.
