Coconut lovers—this cookie is for you!

2 cups flour
½ tsp kosher salt
1 tsp baking soda
¾ cup margarine (1 ½ sticks)
1 cup light brown sugar
1 egg
1 tsp vanilla extract

Preheat the oven to 350°F. Line 2 large sheet pan with parchment paper.

In a large bowl, combine the flour, salt, and baking soda. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment cream the margarine and sugar until light and fluffy.

Use a medium scoopto portion out the cookies. Place on lined pans.

Bake 10 Minutes- 12 Minutes or until slightly golden. Remove from oven and cool completely.

Dip the tops of each cookie in the Vanilla Cream. Sprinkle each cookie with ÂĽ teaspoonshredded coconut. Allow to set.

Freeze in an airtight container for up to 1 month
