The perfect dairy muffin—add mix-ins to make it your own!

2 ½ sticks butter
1 ½ cups sugar
3 eggs
3 cups flour
1 ½ tsp baking powder
1 ½ tsp baking soda
pinch of salt
12 oz sour cream

Preheat oven to 350°F. Line 24 muffin cups with cupcake liners.

Cream butter and sugar in your mixer until light and fluffy.

Add eggs and vanilla and mix.

In a separate bowl, stir together flour, baking soda, baking powder and salt.

Add dry ingredients to egg mixture in 3 additions, alternating with the sour cream.

Mix just until combined. Add chocolate chips and mix well.

Divide batter among prepared muffin cups.

Bake 20 Minutes to 25 Minutes until a toothpick inserted comes out clean.

Remove from oven and cool on a wire rack.

Store at room temperature for 1 week or freeze in an airtight container.

Yes I have made it parve. I subbed margarine for the butter. Use your favorite non-dairy milk. I tried something different–half Bavarian Cream (custard) and half topping–it was delicious!
