The quintessential summer salad!

24 oz baby spinach leaves, checked
10 oz fresh strawberries, hulled, washed and peeled (or other fruit of your choice)
1 small red onion, thinly sliced
4 oz feta cheese, crumbled
½ cup sliced almonds, toasted
For the dressing:
½ cup plain Greek yogurt
1 tbsp mayonnaise
3 tbsp milk or water
1 tbsp apple cider vinegar
1 tbsp maple syrup
2 tsp poppy seeds
Salt and fresh ground black pepper to taste

Place spinach leaves in a large salad bowl. Slice strawberries and add to spinach. Top with onion slices, feta cheese and toasted almonds.Â

Make the dressing:

Add all of the ingredients to a bowl or jar. Whisk together until smooth then season with additional salt to taste.Â

Store the dressing in a jar with a lid or other airtight container in the refrigerator for 5-7 days. Stir or shake as needed before using.
