Tasty and beautiful, these salmon cubes are perfect as a starter or main dish

For the marinade and sauce
½ cup mayonnaise
2 tbsp honey
1 ½ tsp soy sauce
1 tsp kosher salt
Freshly-ground pepper to taste
For the salmon
16 -1 ½” salmon cubes, skin removed
1 cup salted pistachios
1 cup unsalted sunflower seeds
1 cup pumpkin seeds
4 tbsp Everything Spice

Combine marinade ingredients in a small bowl. Whisk to combine. Add salmon cubes and allow to marinate 30 minutes.

Place the nuts and seeds in the bowl of food processor fitted with the S blade. Pulse for 3 second intervals until nuts are crushed. Add the Everything Spice and stir to combine.

Line a sheet pan with parchment paper. Preheat oven to 425°F.

Remove salmon cubes from sauce and dredge in chopped nuts mixture. Thread onto skewers and place on prepared sheet pan. Bake for about 8 Minutes.

Serve with extra sauce on a bed of baby greens.
