
1 cup Seltzer
1 tsp Coffee Granules
4 cups Flour
1 tbsp Baking Powder
1 tsp Baking Soda
½ tsp Salt
5 Egg
1 cup Sugar
2 cups Honey
¾ cup Oil
1 tsp Vanilla Extract

Preheat oven to 350 degrees F. Grease and flour three 8 inch loaf pans.

Dissolve coffee in seltzer and set aside.

Combine flour with baking powder, baking soda, cinnamon and salt.

In the bowl of an electric mixer, beat eggs, sugar and honey until light and fluffy. Add oil and vanilla and mix to combine.

Add remaining ingredients, alternating between dry ingredients and dissolved coffee.

Mix until just combined.

Divide batter evenly among prepared pans.

Bake for 35 to 40 Minutes or until a toothpick inserted in the center of cake comes out dry.

Cool and serve.
