For the dressing
 3 tbsp raspberry jam
 1 tbsp Dijon mustard
 ¼ cup vinegar
 ¼ cup olive oil
 kosher salt
 freshly-ground black pepper
For the salad
 24 oz fresh baby spinach or baby kale
 1 cup pomegranate seeds
 1 green apple, thinly sliced with the peel
 1 small red onion, thinly sliced

Place all the dressing ingredients in a container with a tight-fitting cover.
