Square Brisket with Onion Sauce

Dress up a classic with a delicious savory sauce

 2 large Spanish onions, peeled and quartered
 ½ cup oil
 2 cups chicken stock
 1 tbsp kosher salt
 1 ½ tbsp black pepper
 4 garlic cloves
 4 lbs brisket or French roast, cut in 3-4” squares (available at some butchers or cut it yourself at home)

In a medium saucepan, cook all sauce ingredients until the onions and garlic are very soft, approximately 40 Minutes

Use an immersion blender to puree the mixture until smooth.

Heat oil in a 5–6-quart heavy Dutch oven pot over high heat until very hot.

Place meat cubes in the pot and sear. Do not move the meat until it releases easily from the surface. Turn cubes over and sear on the other side.

Pour the sauce over the meat and lower the heat to medium-low. Cook 2 - 3 hours . Serve or freeze well wrapped.
