Phyllo Apple Pie

This pie is a simple but elegant addition to your tom tov meal!

 1 Golden Delicious apple
 1 Granny Smith apple
 1 Cortland apple
 ½ cup sugar
 2 tsp lemon juice
 10 sheets of phyllo dough, defrosted
 Oil for drizzling

Preheat the oven to 350 degrees F.

Wash and thinly slice each apple using a mandoline slicer. Place all the apple slices in a bowl and add sugar and lemon juice. Toss apple slices to coat.

Lay the phyllo sheets on your work surface. Drizzle about1/2 ½ teaspoon of oil on the top sheet and use a pastry brush to gently spread the oil.

Starting at the top, fan-fold one sheet of phyllo and place around the sides of a 9" pie dish.

Drizzle the next sheet of phyllo with oil, use the brush to spread and fan-fold. Place around the edge of the pie dish.

, overlapping the first sheet slightly.

Continue oiling and folding the remaining phyllo sheets, placing them in concentric circles until you reach the center of the pie dish.

Place apple slices, skin-side up, in the folds of the phyllo dough, alternating colors. Gently spread folds to place the apples securely in the folds. Once all the apples have been placed, pour the accumulated juices over the whole pie.

Bake 45 Minutes- 50 Minutes until bubbly and the phyllo is golden. Serve warm or at room temperature.
