 3 tbsp olive oil
 2 onions, diced
 2 stalks celery, diced
 1 sleeve Snacker crackers, crushed
 3 slices pastrami, shredded
 garlic
 black pepper
 10 capons
 duck sauce

In a large saute pan, heat the olive oil. Saute onions & Celery until golden.

Add crackers, pastrami oil and spices. Mix until well combined.

Place stuffing in the center of prepared capon. Tuck ends under and place in baking pan.

Pour duck sauce over chicken and bake for 90 Minutes.
