Homemade Applesauce

 10-12 Cooking Apples (Cortland) peeled, cored and cut into 1" pieces
 ½ cup Water
 1 tsp Vanilla Extract
 3 tbsp Sugar (optional)
 ½ tsp Cinnamon

Place all ingredients in a large stockpot, cover and simmer over low heat for 30 Minutes. Cool for 10 Minutes and blend. A hand blender works well for this task, saving you the work of transferring the apples to the bowl of your blender or food processor.

Cool and transfer to an airtight container. Freeze.
