Grilled Vegetable Kabobs

Yields1 Serving

 3-4 lb red potatoes
 3-4 lb pearl onions
 3-4 lb eggplant
 3-4 lb red/yellow/green peppers
 3-4 lb zucchini
 3-4 lb fresh mushrooms
 2 tbsp vegetable oil
 2 tbsp balsamic vinegar
 2 tbsp chopped parsley, or 1 tbsp dried parsley flakes
 2 cloves garlic
 1 tsp kosher salt
 12 heavy skewers

Skewers your choice of cubed vegetables, closely packed, in alternating colors. Set aside.

Whisk together marinade ingredients in a small bowl.

Brush generously over the kabobs.

Place on the grill and cook over medium heat for 20 Minutes.

During grilling, turn kabobs once or twice to cook each side, brushing once again with marinade.

Serve immediately.

Note: Wood skewers may be soaked in water for 15 minutes before use so that they don't burn.
