Cream of tartar is not a cream, but a dry, powdery, acidic byproduct of fermenting grapes into wine. Cream of tartar is also known as potassium bitartrate, and cream of tartar is used to help stabilize whipped egg whites and (when combined with baking soda) acts as a leavening agent for baked goods. Cream of tartar is used to make angel food cake and meringues, as well as many other baked goods.
