Shiitake Mushroom & Potato Jalousie

Take your potato knishes up a notch!

 3 tbsp olive oil
 1 onion, diced
 1 shiitake mushrooms, stems discarded, chopped
 3 potatoes, peeled and cubed
 ¼ cup mayonnaise
 Salt and pepper
 Pinch of nutmeg
 36 puff pastry squares, thawed slightly
 1 egg, slightly beaten
Tools
 Jalousie roller
 Silpat

Boil potatoes until soft, for about 20 minutes. Drain well and mash.

In a large sauté pan, heat olive oil. Sauté onions until limp. Add mushrooms and sauté until all liquid evaporates. Add potatoes, mayonnaise and seasoning. Mix until smooth.

Preheat oven to 375 degrees Fahrenheit.

Place 1 puff pastry sheet on a Silpat or floured work surface. Roll out to a 12”x18” rectangle. Using a Jalousie Stripes Roller, cut the dough as directed to yield 12 rectangles.

Place 1 heaping tablespoon of filling on the solid end of the dough. Brush egg on border. Fold over the slitted end of the dough. Press edges down with fingers to adhere. Repeat with the other sheet of puff pastry and remaining filling.

Bake for 20 Minutes until golden.

Jalousie can be prepared in advance and frozen raw. Bake for 25-30 minutes or until golden.
