12 ounces cream cheese, softened
1 (8 ounce) package shredded cheddar or mozzarella cheese
12 ounces jalapeno peppers, slit down the side and seeded
1 cup beer
1 cup all-purpose flour
Kosher salt and pepper to taste
2 quarts oil for frying
In a medium bowl, mix the cheeses. Spoon this mixture into the jalapeno pepper halves.
Mix the beer, flour, salt and pepper in a bowl until well combined. Dip the stuffed jalapenos into the batter, making sure they are well coated.
In a deep 4 or 6 quart pot, heat the oil to 365 degrees F. Deep fry the coated jalapenos 2 to 3 minutes each, until golden brown. Fry a few jalapenos at a time, allowing the oil to return to the proper temperature before frying the next batch. Remove and let drain on a paper towel.
