1 large Spanish onion, thinly sliced
3 tablespoons butter
1 teaspoon sugar
1 1/2 teaspoons flour
4 cups water or vegetable stock
1/2 cup dry white wine
1/4 teaspoon paprika
1/4 teaspoon thyme
1/4 teaspoon freshly ground pepper
1/2 teaspoon salt (or to taste)
1 loaf french bread sliced into 1” thick slices
1 cup shredded cheddar or mozzarella cheese
Saute the sliced onions in butter for 2-3 minutes, until soft. Add sugar and continue to saute over low heat until golden brown, approximately 20 minutes.
Add the flour and stir to coat onions. Add the water or stock and wine. Season with salt and spices and return to a boil. Lower heat and simmer for 30 minutes.
Preheat broiler with rack 6 inches from heat. Ladle soup into ovenproof bowls. Float a slice of french bread on top and sprinkle with shredded cheese.Put bowls under broiler to melt cheese, approximately 2-3 minutes. Serve immediately.
