Grilled Vegetable Kabobs #2


Grilled Vegetable Kabobs #2

3-4 lbs. vegetables, cubed

red potatoes

pearl onions

eggplant

red/ green/yellow pepper

zucchini

fresh mushrooms

 

marinade:

2 Tbls. vegetable oil

2 Tbls. balsamic vinegar

2 Tbls chopped parsley or

1 Tbls dried parsley flakes

1/2 tsp paprika

2 cloves garlic, crushed

1 tsp. kosher salt (optional)

12 heavy wooden skewers

Skewer your choice of cubed vegetables, closely packed, in alternating colors. Set aside.

Whisk together marinade ingredients in a small bowl.  Brush generously over the kabobs.

Place on grill and cook over medium heat for 20 minutes. During grilling, turn kabobs once or twice to cook each side, brushing once again with marinade. Serve immediately.

note: Wood skewers may be soaked in water for 15 minutes before use so they don’t burn.
