Watermelon Tomato Salad

Watermelon Tomato Salad

3 or 4 small to medium tomatoes, in assorted colors if you can find them

1 small English (seedless) cucumber, peeled

2 pounds seedless watermelon

1 Hass avocado, halved, pitted, peeled

1 tablespoon fresh basil, checked and chopped

3 tablespoons extra virgin olive oil

3 tablespoons balsamic vinegar

Kosher salt and freshly ground black pepper

Cut tomatoes and cucumbers into 3/4-inch chunks. Cut watermelon flesh and avocado into 3/4- inch cubes. In a bowl, combine the tomatoes, cucumber, watermelon, avocado, and basil. In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper to taste. Pour over the tomato mixture and toss to coat evenly. Taste and adjust the seasoning before serving. Arrange cubes on a platter and drizzle remaining dressing over cubes.
