Grilled Potato Planks

4-5 large Idaho potatoes

1/4 cup canola oil

1 teaspoon kosher salt

1/4 teaspoon freshly

ground pepper

Wash or scrub potatoes thoroughly. Using a mandoline orsharp knife slice potatoes lengthwise into 1/4” thick slices. Place slices in a shallow pan and add oil, salt and pepper. Turn potato slices to thoroughly coat with oil. Heat grill to medium-high and lay potato planks on the grate. Grill 10 minutes and turn slices over. Grill 5 minutes longer and move to an upper rack to keep warm while grilling meat or poultry.
