
For the cakes:
2 cups flour
1/2 cup cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 stick margarine
1 cup sugar
1 egg
1 tablespoon vanilla extract
1 cup orange juice
Preheat oven to 425 degrees. Line a sheet pan with a Silpat or parchment. Combine dry ingredients; set aside. Cream margarine and sugar until light and fluffy. Add the egg and vanilla. Add orange juice. Add dry ingredients.
Scoop batter onto pan leaving room for spreading. Bake for 7 minutes. Remove from oven and let cool.
For the filling:
1 stick margarine
2 egg whites
1/2 teaspoon vanilla
2 1/2 cups confectioners’ sugar
Beat egg whites with confectioners’ sugar until firm peaks form. Add remaining ingredients. Spread filling between two cookies.
