Cinnamon Crinkles

Cinnamon Crinkles

1/2 cup margarine, softened (1 stick)

1/2 cup brown sugar

1/4 cup plus 2 tablespoons granulated sugar

1 teaspoon vanilla extract

1 egg

1 teaspoon cream of tartar

1/2 teaspoon baking soda

1 1/3 cups flour

8 ounces cinnamon chips

1 teaspoon cinnamon

        Preheat oven to 375o.  Line cookie sheets with Silpat or parchment paper.

        Cream margarine with brown sugar, 1/4 cup regular sugar, vanilla and egg until light.  Sift in flour, cream of tartar and baking soda. Mix until combined and stiff.   Stir in cinnamon chips.

        Combine 2 tablespoons sugar with cinnamon in a small bowl.  Using a small scoop or your hands make balls of  batter, approximately 1 1/2 inches in diameter.  Roll balls in cinnamon sugar mixture.  Place 2 inches apart on cookie sheet. 

        Bake 8 to 10 minutes.  Do not overbake.  Cool on wire rack.   Yield: 3 dozen cookies
