
3/4 cup sugar
10 tablespoons margarine ( 1 1/4 sticks)
2 tablespoons orange juice
2 teaspoons vanilla extract
1 large egg
2 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
Beat first 4 ingredients in a large bowl until well blended. Increase mixer to high speed until mixture is light & fluffy. Turn off mixer and add juice, vanilla & egg. Mix again until blended.
Add flour and mix at low speed until all the flour is incorporated.
Remove from bowl and divide dough into 2 parts. Wrap each in plastic wrap and refrigerate 1 hour or freeze 30 minutes.
Remove 1 piece of dough at a time and roll out to 1/8” thickness.Cut your cookies using various cutters. Reroll scraps and cut more cookies. Bake at 350o for 12-15 minutes. Transfer to a rack to cool. Once the cookies are cool, decorate or sandwich 2 cookies with jam. Yields 3-4 doz.
