3 Golden Delicious apples, peeled, shredded on a coarse grater
5 tablespoons plus 2½ cups sugar
2 teaspoons cinnamon
1 cup oil
¼ cup orange juice
1 teaspoon orange zest (finely grated peel, orange part only)
1 teaspoon vanilla extract
3 cups flour
3½ teaspoons baking powder
½ teaspoon salt
prepare the filling:
Preheat oven to 325 degrees. Spray a 12 cup bundt with baking spray.
Combine the shredded apples with the 5 tablespoons of sugar and cinnamon in a bowl and set aside.
prepare the cake:
Mix eggs, oil, juice, orange zest and vanilla and sugar until well combined. Sift together flour, baking powder and salt. Add the dry ingredients to the batter and mix.
Spoon 1½ cups of batter into the prepared bundt pan. Drain the liquid that has accumulated in the apple mixture and discard. Spoon half the apple mixture over the batter in the pan. Top with another 1½ cups of batter. Spoon remaining apple mixture over batter then pour the rest of the cake batter into the pan.
Bake 1 ½ hours. Cool and remove from pan. Continue to cool until it reaches room temperature.
