4 tilapia fillets
½ cup flour
4 tablespoons canola oil, divided
2 tablespoons capers, diced
½ cup green olives, diced
1 red bell pepper, diced
1 green pepper, diced
1 small onion, diced
Freshly ground black pepper to taste
Preheat oven to 350 degrees. Prepare a baking dish large enough to hold the tilapia fillets.
Place flour in a flat plate. Dredge tilapia fillets in flour, coating both sides. Heat 2 tablespoons oil in a large fry pan. Once the oil is extremely hot, sear tilapia fillets until the flour coating has formed a light crust, about 3-4 minutes on each side. Remove fillets from the pan and place them in a baking dish.
Wipe any excess flour out of the fry pan. Heat remaining oil until very hot. Sauté diced capers, olives, peppers and onions, stirring constantly, until vegetables are fragrant and soft. Add pepper to taste.
Pour the sautéed vegetables over the tilapia fillets in the baking pan. Bake 30 minutes. Serve immediately.
