Roll Out Cookies

 2 sticks margarine, softened
 2 cups confectioners' sugar
 3 eggs
 ½ tsp vanilla extract
 4 cups flour
 1 tbsp baking powder

Preheat oven to 350 degrees.

In the bowl of an electric mixer, cream margarine and confectioners' sugar.

Add eggs and vanilla. Stir flour and baking powder together and add to creamed mixture. Roll out dough 1/4-inch thick onto Silpat baking mat.

Cut out desired shapes with cookie cutter.

Place Silpat into sheet pan.

Bake for 10 Minutes or until slightly browned. Remove from oven and let cool on a cooling rack.
