
1 3-4 pound whole chicken
½ a lemon
2 tablespoons grated ginger, divided
1 teaspoon coarse salt
1/3 cup olive or vegetable oil
1/4 cup honey
Preheat oven to 350 degrees F.
Rub chicken skin with lemon half. Sprinkle with 1 teaspoon ginger and salt. Combine oil, honey and remaining ginger and brush the chicken with this mixture. Roast for 1½ - 2 hours, basting occasionally with honey mixture. Serve immediately.
