2 tablespoons fresh dill, checked & chopped
2 tablespoons dijon or spicy mustard
1 teaspoon grated lemon peel
2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon ground red pepper
2 garlic cloves, minced
8 narrow salmon fillets, skinned
Preheat grill pan or broiler. Combine fresh dill, mustard, lemon peel, juice, salt, pepper, and garlic in a bowl, stirring with a whisk. Add salmon fillets, tossing gently to coat.
Thread salmon onto skewers in a back and forth motion. Place salmon on grill pan or broiler pan coated lightly with oil and grill 3 minutes on each side or until fish flakes easily when tested with a fork.
serves 8 as an appetizer
